Synopsis: 

The Kitchen Manager, in cooperation with the Sam’s Place Manager, is responsible for the smooth operation of the Sam’s Place kitchen. S/he will work closely with the Sam’s Place Manager to continue to develop an innovative menu, catering, special events, and media presence. The Kitchen Manager is responsible for creating and/or overseeing food service and preparation, and will work extensively training and supervising volunteers to ensure high standards of sanitation, cleanliness, customer service, and safety are maintained in the kitchen at all times. This is a part time position with a guarantee of at least 28 hours/week. Extra hours will be required for catering and special events.

Qualifications: 
  • Experience working in the food industry
  • A willingness to work with the Manager to develop new menu ideas
  • Food handler’s certificate, or willingness to get one
  • Experience working in the catering industry an asset
  • Must have a valid driver’s license
  • A willingness to engage in and promote the mission of Sam’s Place and MCC
  • Willingness to work flexible shifts, including occasional Sundays
  • Excellent interpersonal skills, with the ability to work with people from diverse backgrounds
  • Excellent conflict resolution skills
  • Supervisory and Kitchen Management experience an asset
  • Excellent communication and management skills
  • Good time management and planning skills
  • Knowledge about different kitchen operations

Assignment Description: 

The Kitchen Manager is responsible to the Sam’s Place Manager, and will work over the lunch period for at least five shifts a week, unless otherwise arranged with the Manager. S/he will open the store at the start of a shift, greet, and work with volunteers.

The Kitchen Manager is responsible for all food production, the development of menus, food purchase specifications, and recipes. S/he is expected to supervise food production, develop and monitor the food budget, inventory, food quality, and sanitation standards to ensure a well maintained, efficient, and cost effective kitchen.

The Kitchen Manager will work with both skilled and new volunteers and will be expected to plan, organize, direct, coordinate, and delegate responsibility to capable volunteers to ensure the goals and objectives of the kitchen are met. S/he will be expected to pay attention to the gifts and abilities of new volunteers and staff in order to help them find their place in the larger mission of Sam’s Place.

The Kitchen Manager will take the initiative of continually developing the menu, training volunteers to help with kitchen duties, and ensuring a high quality, consistent product. S/he should expect to work with the Manager and other volunteers to ensure that all food preparation instructions are current and helpful.

The Kitchen Manager will collaborate with the Sam’s Place Manager to help promote special events, catering, and other initiatives. This is a part time position with a guarantee of at least 28 hours/week. Extra hours will be required for catering and special events.

Sam's Place is a community resource operated by MCC Manitoba in the Elmwood neighbourhood (159 Henderson Hwy) of Winnipeg. It features a used bookstore, a café – where light meals are available, sourced from local ingredients - and a stage for musical and artistic performances.

Duties: 
  • Cook or directly supervise the cooking and preparation of food, especially items requiring skilled preparation.
  • Develop standard recipes and techniques for food preparation and presentation which assures consistency, high quality, and minimal food costs.
  • Exercise portion controls to minimize waste and assist in menu pricing.
  • Ensure all recipes are written down and kept in a recipe book. Pictures of presentation are to be taken of all dishes and visible to volunteers, with portion sizes and assembly instructions readily available.
  • Put procedures in place to assure a smooth running kitchen at all times. Make sure these procedures are adhered to at all times.
  • Order, monitor and maintain adequate food inventory to ensure menu items are available and food waste is kept to a minimum.
  • Train, monitor, and evaluate volunteer kitchen staff.
  • Maintain a regular cleaning and maintenance schedule for all kitchen areas and equipment.
  • Ensure customers are satisfied with food and service, and responds to customer concerns.
  • Maintain an active, on-brand media presence to drive sales and generate public engagement with the mission of Sam’s Place and MCC Manitoba.
  • Create and execute seasonally appropriate menus featuring local, fair trade, and organic foods.
  • Assist with opening/closing the store and greeting volunteers.
  • Motivate staff and volunteers and works to develop their knowledge and skills.
  • In consultation with the Sam’s Place Manager, be willing to take corrective action to ensure both financial and program goals are met.
  • Monitor volunteer and employee meal program.
  • Consult with Sam’s Place Manager on the creation of special events and catering.
  • Ensure that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times.
  • Implement training of volunteers to increase their knowledge of safety, sanitation, and food justice principles.
  • Participate in staff meetings when necessary.
  • Support and encourage recycling, composting, and local food initiatives.
  • Work with the general manager and other staff to ensure the mission and vision of Sam’s Place are being met.
  • Work to develop a working relationship with local and fair trade food suppliers.
  • Ensure that the Gospel of Jesus Christ is exemplified in the performance of all job responsibilities and through personal example
  • Attend and be actively involved in a local congregation
  • Model non-violent peacemaking in the workplace and community through respectful interactions & work relationships

Location Description: 

Winnipeg is a city of approximately 650,000 located on the Red River, 108 kms north of the US border. Being near the centre of Canada, it is a major transportation centre. The city's population is fairly diverse, representing people from many different cultures. Most of the people are English speaking with French, Filipino and Chinese being other predominant languages. There are about 65,000 First Nations people living in Winnipeg.

There are almost 50 Mennonite churches in Winnipeg, which is home to about 30,000 Mennonites. Winnipeg has two large public liberal arts universities and a Mennonite university (Canadian Mennonite University). There are also two Mennonite private high schools.

Winnipeg temperatures can range from 40°C (104°F) in summer to -45°C (-49°F) in winter, with average summer temperatures around 25.4°C (77.7°F) and average winter temperatures around -12.9°C (8.8°F).
